Instructions

  1. Dice the chicken into bite-sized pieces and season with chicken seasoning, onion granules, smoked paprika, salt, and dried rosemary. Heat a pan over medium heat with a little oil, then add the chicken and cook for 8-10 minutes, until golden brown and fully cooked. Remove from heat and set aside.
  2. Cook the pasta in salted boiling water according to package instructions (about 8-10 minutes). In the last 2 minutes, add the broccoli to the pot. Drain everything and set aside.
  3. Melt the butter in a saucepan over medium heat, then add the garlic and cook for 1 minute. Stir in the flour and cook for 1-2 minutes, stirring continuously until golden. Gradually pour in the milk, whisking constantly to prevent lumps. Once the sauce starts to thicken (about 3-5 minutes), add the onion powder, paprika, and parsley. Stir in the cheddar, gouda, and mozzarella, mixing until smooth.
  4. Preheat the oven to 180°C (fan) / 200°C (conventional). In a large mixing bowl, combine the pasta, cooked chicken, broccoli, and cheese sauce. Mix well, then transfer to an ovenproof dish. Sprinkle the remaining 100g cheddar over the top and bake for 25 minutes, until golden and bubbly.
  5. Let it cool for 5 minutes, then dig in. Perfect for a cosy, cheesy meal!
