1. How do I get the skin extra crispy?
To get that crispy skin, make sure to dry the chicken skin before rubbing it with the garlic butter. Any excess moisture will make it harder for the skin to crisp up. Also, roast the chicken at a high temperature to allow the skin to brown beautifully.

2. Can I use fresh garlic instead of garlic powder?

  • 1 tbsp salt
  • 2 tbsp black pepper
  • 2 tbsp thyme
  • 2 tbsp parsley
  • 1 tbsp garlic puree

Roast Chicken:

  • 1 medium-sized chicken (1-1.2kg)
  • 2 tbsp chicken seasoning

Compound Butter:

  • 250g butter
  • 4 sprigs of rosemary
  • 2 tbsp salt
  • 4 tbsp black pepper
  • 4 tbsp thyme
  • 4 tbsp parsley
  • 2 tbsp garlic puree

  • 2 medium-sized chickens (2-2.4kg)
  • 4 tbsp chicken seasoning

  • 375g butter
  • 6 sprigs of rosemary
  • 3 tbsp salt

  • 2 tbsp chicken seasoning

Roast Chicken:

  • 2 medium-sized chickens (4.4-5.2lbs)
  • 4 tbsp chicken seasoning

Compound Butter:

  • 1 1/2 cups butter
  • 6 sprigs of rosemary
  • 3 tbsp salt
  • 6 tbsp black pepper
  • 6 tbsp thyme
  • 6 tbsp parsley
  • 3 tbsp garlic puree

Roast Chicken:

  • 3 medium-sized chickens (6.6-7.8lbs)
  • 6 tbsp chicken seasoning

Instructions

  1. Heat oven to 200C/180C fan/gas 6.
  2. In a small bowl, mash cubed butter with all listed seasoning. Mix everything together with some seasoning and set aside.
  3. With scissors cut the spatchcock out of the chicken then thoroughly wash the chicken with half a lemon and place it in Main Bake
  4. Use your fingers to loosen the chicken skin away from the breast, then push most of the butter mix into the gap.
  5. Rub the rest of the butter all over the outside of the chicken. Lastly,  sprinkle extra all-purpose seasoning and rub it into the chicken.
  6. Set the chicken on the middle shelf for 45-90 minutes, basting with the buttery juices after about 40 mins. If your chicken is browning a lot 25 minutes in cover within tinfoil and remove 10 minutes before the end of cooking time.
  7. When the chicken is dark golden, crispy-skinned and the juices run clear, remove from the oven and leave in the tin for 5 mins.
