  • 100g plain flour

  • 300g double cream
  • 175g ladyfingers (1 pack)
  • 150ml strong brewed coffee, cooled
  • 2 tbsp cocoa powder (for dusting)

  • 15.8oz butter, melted
  • 21oz light brown sugar
  • 6 eggs
  • 10.5oz plain flour

Tiramisu Layer:

  • 18.5oz mascarpone cheese
  • 31.5oz double cream
  • 18.5oz ladyfingers (3 packs)
  • 15 fl oz strong brewed coffee, cooled
  • 6 tbsp cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 170°C (fan 150°C) / 340°F. Grease and line a 20cm (8-inch) square baking tin with parchment paper.
  2. Prepare the brownie batter: Melt the dark chocolate and butter together in a heatproof bowl over a pan of simmering water (or microwave in short bursts). Stir until smooth.
  3. Whisk in the light brown sugar until combined, then add the eggs, one at a time, whisking well after each addition.
  4. Sift in the plain flour and gently fold until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared tin and bake for 22-25 minutes, or until the centre is just set. Let it cool completely in the tin.
  6. Prepare the tiramisu layer: In a bowl, whisk together the mascarpone and double cream until smooth and thick.
  7. Quickly dip the ladyfingers into the cooled coffee (don’t soak them too long or they’ll become soggy). Arrange them in a single layer over the cooled brownie.
